Short Instruction
- Cut potatoes into sticks
- Fill large bowl with water
- Toss the sticks in
- Cover bowl with a plate
- Leave sticks inside for a while
- Shake around
- Pour water out through a slit
- Refill with water, shake around and pour out again (to wash them from excess starch*)
- Deep fry at 160°C for 7 minutes
- Lift fryer basket and turn the fryer off
- Wait 30 minutes
- Turn fryer on. Deep fry again 170°C for 7 minutes
- Lift fryer basket
Long Instruction
First, you need a large bowl, a cutting board and potatoes.
Take each potato. Cut them into slices.
Then cut the slices into sticks. Toss them into the large bowl.
Give them a salt and water treatment. Pour a good amount of salt on the sticks and fill the whole thing up with water. This will desinfect the fries and simultaneously dissolve excess starch, which is very important.
Note: Excess starch can get your oil dirty and muddy. It’s important to wash it out.
Like that, let the bowl stand for at least 20 minutes.
Flush multiple times:
After 20 minutes, get rid of the muddy water.
Put a plate over the bowl. Pour the whole starchy water through a tiny slit out in the sink so that the fries don’t fall out, but the water does. Fill the thing up with water and flush like that again. Repeat the process at least 3-4 times as shown in the video.
You can optionally fill it up with water again and let it stand again. You don’t have to, but it will make the fries even cleaner.
Frying: Round #1. 160°C at 7 minutes.
We are doing the FIRST ROUND of frying. We’re basically “cooking” the fries first before we let them rest for another round. The second round will make the fries crispy. Pre-heat your deep fryer to 160°C and wait until it’s maxed. Put half of your sticks in the basket. Lower it into the oil and set your timer to 7 minutes right away.
..later, your timer is ringing.
Lift the basket from the oil and turn OFF the deep fryer. Let it drip off and just hang there for at least 20 minutes. You can meanwhile put this basket’s content into a a bowl with a towel and put the other half of raw sticks in the fryer and do this process with them.
You may notice a squealing/squeaking sound from the fries, which is good. The pores have opened to their cores and the water is leaving.
Frying: Round #2. 170°C for 7 minutes.
Now it’s time for the final round, which will make the fries crisp.
This is the magical part. Time and temperature is absolutely crucial here. You should try my suggestion first, after that you can use your own time if you like them crispier or softer. Take the resting fries and put them in the deep fryer’s basket again (unnecessary if they’re already there). Pre-heat your deep fryer to 170°C. When it’s maxed out, lower the basket into the oil and set your timer to 7 minutes right away. Fry.
Poke them around a little to keep them from sticking together. Of course, not with your bare hands!
Removing Them
At exactly 7 minutes, as your timer goes off, you will hear the squealing and squeaking sound of the fries.
Take the basket out of the oil and turn off the fryer. The fries have now turned to an epic, gold-brown color. The texture is now between crispy and soft.
The Finish
i recommend letting them stand for a few minutes. This is the aroma phase. They will start to get much better after a short while.
Seasoning! Toss a few spices of choice such as salt, red pepper or curry powder on top of them, and/or serve with ketchup or Sauce Tartare, this is what i do. Sometimes habanero powder. Or squeeze a lemon on top of them. You can’t get off the chair once you’ve started this goodness.
I season them sort like this, gradually dropping more and more habanero powder on it:
Once you made your own fries… you will never ever go back to oven fries again.
Tip: The “heavy metal munchies” version is to toss a ton of cheese, onion, bacon and seasoning on the fries and grill it all in the oven at 200°C for 5-10 minutes. You might need a fork to get at this. This is just a glimpse of what heaven could be like.
* = Excess starch can dirty your oil. It is recommended to wash your fries thoroughly before frying them.
